Who loves cakes? Who loves the gym? Well do we have the cupcake for you! This cupcake is full of protein and it absolutely delicious. It has the light, fluffy texture of a normal cupcake but it's so much healthier and will help you attain the gains. A real treat without the cheat.

Ingredients:
3 eggs
1 teaspoon of honey
1 teaspoon of bicarbonate soda
100 grams of oat flour (oats blended up. We used golden syrup Oat So Simple)
4 scoops of vanilla protein powder (or any flavour you like)
150g of apple sauce
A few drops of lemon juice
Toppings:
Lemon Curd
Jam

112 calories (without toppings)
9.5 grams of protein
13.8 grams of carbs
1.2 grams of fat
Recipe:
1. Start by preheating the oven to 160°C fan / 180°C / Gas Mark 4.
2. For this recipe you will be using one whole egg and two other egg whites. Start by separating the yolks and egg whites from the eggs. Use a blender or mixer to whisk the two egg whites and one full egg. They should become frothy and form stiff peaks when ready. This will take about 5-6 minutes.
3. Rather than buying oat flour, I used three sachets of golden syrup oat-so-simple packets. Blend these up until smooth (you can just use regular oats too but make sure to blend them until they look like flour).
4. Add the oat flour to a mixing bowl and mix together with the 150 grams of apple sauce, four scoops of protein powder and 1 teaspoon of bicarbonate of soda.
5. Next, gently fold in the eggs. Do this a little bit at a time and make sure not to knock the
air bubbles out of the mixture.
6. Add in the one teaspoon of honey and a few drops of lemon juice. Mix together.
7. Now get out a cupcake tin and spray each section with some low calorie cooking spray.
Spoon the mixture into a cupcake sections. This should separate out into about eleven cupcakes. Be sure not to add too much mixture to each one as these rise in the oven.
8. Now for the fun part! Add your toppings! We put a teaspoon of lemon curd onto half of ours and a teaspoon of jam onto the other half but you can go crazy and add whatever toppings you like. How about some healthy cinnamon? Or some more honey?
9. Place into the oven and bake for 15-20 minutes until risen and golden.
When ready, take them out and wait for them to cool down before munching on them. Beware though, these protein cupcakes are addictive.
